Tahini-Smothered Charred Cabbage

Ingredients
1 medium head of green cabbage
1 tbsp. toasted black and white sesame seeds
1 tbsp. olive oil
kosher salt

For the sauce: 
1/3 c. tahini
1/4 c. olive oil
1/2 tsp. cumin
1 tsp. maple syrup
1 lemon, zested and juiced
1 garlic clove, grated
kosher salt
cold water

Directions
Prepare the dressing by whisking all ingredients together, with a significant pinch of salt and a few tablespoons of cold water. 

Cut cabbage into six wedges, keeping core intact, and rub each with a little olive oil and kosher salt. Grill cabbage on both sides, until deeply charred. You should be able to slide a paring knife easily through the cabbage. Let rest on a cutting board for 5 minutes.

Drizzle dressing over grilled cabbage and sprinkle with sesame seeds. 

Serves 6 as a side.

Coconut-Lime Rice with Red Beans & Mango

Ingredients
2 c. short-grain brown rice
2 tsp. sesame oil
1 c. diced onion or shallots
1 1/2 tbsp. fresh ginger, minced
1 c. canned coconut milk
2 1/2 c. vegetable broth
1/4 tsp. salt
1/8 tsp. cayenne pepper
1 mango
1 1/2 c. cooked red beans (or 2 15-oz. cans)
1 lime, juiced and zested
cilantro and scallions, for serving

Directions
Rinse the rice under cool water and set aside. Saute onions in a large soup pot, until they start to brown a bit. Add the ginger and saute for 30 seconds, or until fragrant. Add the rice and keep stirring until rice is slightly toasted, about 2 minutes. Add the coconut milk, broth, salt and cayenne and bring to a simmer. Give the pot a quick stir, cover it, and leave it alone until rice is tender and has absorbed nearly all the liquid (about 40 minutes).

While the rice is cooking, chop up the mango into bite-size pieces.

When the rice is tender, fold in the beans, lime juice and zest, and mango. Let this all cook together for another minute or two so that everything warms up. Serve topped with cilantro and scallions.

Serves 4 to 6.

Roasted Vegetable Torte

Ingredients
3 zucchini, cut into 1/4-inch slices
1 red onions, cut in half lengthwise and sliced
2 cloves garlic, minced
olive oil
kosher salt
black pepper, freshly ground
3 red bell peppers, halved, cored & seeded
3 yellow bell peppers, halved, cored & seeded
1 eggplant, unpeeled, cut into 1/4-inch slices (about 2 lbs.)
1/2 c. Parmesan cheese, freshly grated

Directions
Preheat oven to 400 degrees. Cook the zucchini, onions, and garlic in two tablespoons of olive oil in a large saute pan over medium heat for 10 minutes, or until the zucchini is tender. Season with salt and pepper.

Brush the peppers and eggplant with olive oil, season with salt and pepper, and roast on a baking sheet for 30 to 40 minutes, until soft but not browned.

In a 9-inch round spring form pan, place each vegetable in a single, overlapping layer, sprinkling Parmesan cheese, salt and pepper to taste between each layer. Begin with half the eggplant, then layer half of the zucchini and onions, then all of the red peppers, then all of the yellow peppers, the the rest of the zucchini and onions, and finally the rest of the eggplant.

Cover the top of the vegetables with a 9-inch round piece of parchment paper or waxed paper. Place a 9-inch flat disk (another cake pan or the bottom of a false-bottom tart pan) on top and weight it with a heavy jar. Place on a plate or baking sheet (it will leak) and chill completely.

Drain the liquids, place on a platter, and serve at room temperature.  

Serves 6.

Tangy Fried Brussels Sprouts

Ingredients
Brussels sprouts, quartered
neutral frying oil
1 part Sriracha sauce
1 part honey
1 part lime juice

Directions
Mix the Sriracha sauce, honey and lime juice until homogeneous. Heat up 1/4 to 1/2 inch of oil in a deep frying pan. Toss constantly, frying sprouts until crispy. The sprouts will go from undone to done very quickly. Take the sprouts off the heat and spread out on paper towels to absorb excess oil. Finally, coat the sprouts in the dressing.

Cranberry Cashew Biryani

Ingredients
1 tsp. vegetable oil
1 tsp. cumin seeds
1 tsp. mustard seeds
3 cloves garlic, crushed
2 medium carrots, diced
1 can chickpeas, rinsed and drained
200 g. basmati rice
1-1/2 tsp. garam masala
1/4 tsp. tumeric
1/4 tsp. red pepper flakes
3/4 tsp. salt
1000 mL water
5 tsp. tomato paste
60 g. dried cranberries
80 g. roasted unsalted cashews, chopped
50 g. frozen peas
fresh cilantro and chopped scallions, for garnish

Directions
Preheat the oil in a large saucepan over medium heat. Add cumin and mustard seeds and cover. Let the seeds pop for about 30 seconds and stir a few times. If seeds are not too brown, allow to pop for about 30 seconds more. Add garlic and saute for about a minute more. Add carrots, chickpeas, rice, spices, and stir constantly for about a minute. Dissolve tomato paste in warm water, and add to mixture. Cover and bring to a boil. Once boiling, reduce heat to a simmer. Allow to cook for about 30 minutes, stirring occassionally; at this point most of the liquid should be dissolved. Stir in the cranberries, cashews, and peas. Cook a little longer, if necessary, until liquid is completely absorbed. Fluff with a fork and garnish to serve. Serves 4 as an entree, 6 as a side.

Roasted Potatoes

A very easy, filling side dish when potatoes are in season. 

Ingredients
1 qt. small potatoes, sliced
dry onion soup mix or salt & pepper
olive oil or butter

Directions
Toss sliced potatoes in olive oil or melted butter, and soup mix. Roast in a 9x13-inch casserole dish for 30 minutes at 425 degrees. Turn once while cooking. Some of the potatoes should be crispy!

Lean Green Power Salad

Ingredients
4 c. kale, chopped
1 avocado, diced
1/2 c. quinoa, cooked
1/2 c. pomegranate seeds
1/2 c. pecans, chopped
1/4 c. goat cheese, crumbled
1/4 c. olive oil
1/4 c. apple cider vinegar
1 Meyer lemon, juiced and zested
1 tbsp. agave

Directions
If you’re using baby kale greens, you can keep them raw. Mature kale may be too tough for your taste, so feel free to blanch and cool very briefly. Combine kale, avocado, pomegranate, pecans and goat cheese and toss. Whisk together lemon juice, lemon zest, vinegar, olive oil and agave. Dress salad to serve.

Lemon Dill Snap Peas & Chickpeas

Ingredients
1 tbsp. olive oil
1/3 c. green onion, diced
1 c. snap peas
1 tbsp. fresh dill
2-3 tbsp. lemon juice
1/8 tsp. salt
1/2 c. chickpeas
goat cheese or French feta, chives, and olive oil to finish

Directions
In a large skillet, heat olive oil over medium heat. Add diced green onions and saute until slightly soft, 2-3 minutes. Stir in snap peas, dill, lemon juice, and salt. Cook until snap peas are cooked and bright green but still have some snap-3-4 minutes. Add in chickpeas and cook for 2-3 more minutes. Remove from heat and toss with goat cheese, chives, and drizzle with a bit more olive oil to finish.

Quinoa with Mango & Curried Yogurt


Ingredients
1/3 c. plain yogurt
1 tbsp. fresh lime juice
2 tsp. curry powder
1 tsp. finely grated peeled fresh ginger
3/4 tsp. salt
1/4 tsp. black pepper
2 tbsp. vegetable or peanut oil
1 1/3 c. quinoa
1 lb. firm-ripe mango, peeled, pitted, and cut into 1/2-inch chunks (2 cups)
1 red bell pepper, cut into 1/4-inch dice
1 fresh jalapeƱo chile, seeded (if desired for less heat) and minced
1/3 c. chopped fresh mint
1/2 c. salted roasted peanuts (2 1/2 ounces), chopped

Directions
Whisk together yogurt, lime juice, curry powder, ginger, salt, and pepper in a large bowl. Add oil in a slow stream, whisking until combined.
Rinse quinoa in a bowl using 5 changes of water, rubbing grains and letting them settle before pouring off water (if quinoa does not settle, drain in a large sieve after each rinsing).

Cook quinoa in a 4- to 5-quart pot of boiling salted water 10 minutes. Drain in a large sieve and rinse under cold running water.

Set sieve with quinoa over a saucepan containing 1 1/2 inches boiling water (sieve should not touch water) and steam quinoa, covered with a kitchen towel and lid, until fluffy and dry, 10 to 12 minutes. Toss quinoa with curried yogurt and remaining ingredients in a large bowl. Serve warm or at room temperature.

Barbecue Buttermilk Onion Rings


Ingredients
2 tbsp. barbecue sauce
1 tbsp. hot sauce
1/2 tsp. salt
1/2 tsp. fresh ground black pepper
1 large sweet yellow onion
2 c. buttermilk
2 c. all-purpose flour
2 tsp. salt
1/2 tsp. paprika
1/2 tsp. fresh ground black pepper
1 qt. vegetable, canola or peanut oil for frying
NOTE: Consider using leftover buttermilk mixture for biscuits the next day!

Dipping Sauce
1/2 c. sour cream
3 tbsp. buttermilk
2 tbsp. barbecue sauce
1 tsp. hot sauce
two pinches salt
2 tbsp. fresh chives, slices tiny

Directions
Cut of the bottom and top end of the onion. Remove the skin and slice onion into rings as thick as you like. Separate the rings and place in a large bowl. Save the small onion insides for a salad or something.
Mix onions, barbecue sauce, hot sauce, salt and pepper until the onion rings are well coated. Top with buttermilk and submerge all of the rings. Allow to rest for 15 minutes while you assemble the flour and dipping sauce.

In a different large bowl, mix together the flour, salt, paprika and ground pepper.

In a medium sized, heavy bottom pan fit with a fry thermometer, begin to heat the oil to 360 degrees over medium heat.

Assemble the dipping sauce by whisking together sour cream, buttermilk, barbecue sauce, hot sauce and salt. Sprinkle in a big teaspoon of fresh chives and place in the fridge while you fry the onion rings.

Preheat oven to 150 degrees F and prepare a baking sheet with paper towels to soak up the excess oil.

Fry the onions in four batches. Using tongs, remove several rings from the buttermilk and dredge completely in the flour mixture. Carefully place in the fry oil once it reaches 360 degrees. Allow the onion to cook for a minute and a half before flipping. Each batch will take about three minutes. Once golden brown, remove from the oil and place on the paper towels. Let rest in the warm oven while you fry the rest of the batches. Note! Be sure to let the fry oil return to 360 degrees F before frying the second, third and fourth batches.

Enjoy immediately sprinkled with fresh chives with dipping sauce.

Sweet Potatoes with Warm Black Bean Salad


Ingredients
4 medium sweet potatoes
1 15-oz. can black beans, rinsed
2 medium tomatoes, diced
1 tbsp. extra-virgin olive oil
1 tsp. ground cumin
1 tsp. ground coriander
3/4 tsp. salt
1/4 c. reduced-fat sour cream
1/4 c. chopped fresh cilantro

Directions
Prick sweet potatoes with a fork in several places. Microwave on high until tender all the way to the center, 12 to 15 minutes. (Alternatively, place in a baking dish and bake at 425 degrees F until tender all the way to the center, about 1 hour.)

Meanwhile, in a medium microwaveable bowl, combine beans, tomatoes, oil, cumin, coriander and salt; microwave on high until just heated through, 2 to 3 minutes. (Alternatively, heat in a small saucepan over medium heat.)

When just cool enough to handle, slash each sweet potato lengthwise, press open to make a well in the center and spoon the bean mixture into the well. Top each with a dollop of sour cream and a sprinkle of cilantro.

Sauteed Root Veggies

An autumnal treat made with a mix of late harvest veggies.

Ingredients

parsnips, peeled & julienned
carrots, peeled & julienned
baby turnips, peeled & julienned
onion, sliced & quartered
McCormicks’ Vegetable Supreme seasoning
butter

Directions

Melt about 1/2 stick of butter in a large pan. SautƩ all the vegetables over high heat until they begin to brown. Toss vegetables with Vegetable Supreme and serve.
--OR--
Coat the raw vegetables in melted butter and Vegetable Supreme. Bake in the oven at about 400 degrees until golden brown.

Pineapple Bread Pudding

Something special for the sweet tooth at dinner time, this pineapple bread pudding is an excellent accompaniment to ham!

Ingredients

8 slices bread, cubed
1 tsp. cinnamon
1/2 tsp. nutmeg
2-15 oz. cans crushed pineapple
3/4 c. brown sugar
1/2 c. butter, melted
4 eggs, beaten
1 tbsp. vanilla

Directions

Preheat oven to 350 degrees. Combine bread, cinnamon and nutmeg. Stir in pineapple. Spoon into greased 12x8 casserole dish. Whisk together sugar, butter, eggs and vanilla. Pour over bread. Bake for 40 to 45 minutes.

Ina's Roasted Tomatoes

Ingredients

Roma tomatoes
Olive oil
Garlic
Breadcrumbs
Gorgonzola cheese

Directions

Halve the tomatoes lengthwise and scoop out the seeds. Toss in an garlic and olive oil marinade.
Toss breadcrumbs and gorgonzola, then stuff into tomatoes. Place tomatoes on parchment paper and sprinkle with more olive oil.

Bake at 375 degrees for 20 minutes. Sprinkle with parsley to serve.

Classic Tzatziki

A traditional Greek dip, tzatziki makes a tasty topping for sandwiches. Serve with pita wedges or cruditƩs.

Ingredients

1 c. cucumber, peeled, seeded and grated
1/8 tsp. salt
1 c. plain Greek yogurt
1 tbsp. fresh mint, finely chopped
2 tsp. fresh lemon juice
2 tsp. fresh dill, finely chopped
1/4 tsp. salt
2 garlic cloves, minced

Directions

Place cucumber on several layers of paper towels; sprinkle with 1/8 tsp. salt. Let stand 30 minutes. Combine cucumber, yogurt, and remaining ingredients, stirring until well blended. Refrigerate at least one hour before serving.

Strawberry Tabbouleh

Ingredients

1 c. Bulgar wheat, medium grind
4 scallions, finely chopped
1/3 c. red onion, finely minced
3 c. fresh parsley, finely chopped and dried
1 c. spearmint, finely chopped and dried
1/3 c. olive oil
1/4 c. apple cider vinegar (more to taste)
1 tbsp. fresh lemon juice
1 tbsp. honey
1/2 tsp. cumin
1/2 tsp. allspice
salt and pepper, freshly ground to taste
2 c. strawberries, diced
1 1/2 c. English cucumbers, diced
1 c. firm tomato, seeded and diced
1/2 c. toasted walnuts, chopped
crumbled goat cheese, optional

Directions

Bring 1 cup of water to a boil and pour over bulgar wheat in a heat-proof bowl. Stir in a 1/2 teaspoon of salt. Allow to soak for 30 minutes, until the bulgur is swollen, but still a bit firm. All the water should have been absorbed, but if some remains, just drain and squeeze bulgur dry. Empty into a large bowl.

Add the scallions, red onion, parsley and mint to the bowl. Whisk together olive oil, vinegar, lemon juice, honey, cumin, and allspice, and pour over ingredients. Toss to coat and season with salt and pepper. Cover and refrigerate for 2 to 3 hours to allow ingredients to blend.

Just before serving, add strawberries, cucumbers, tomato and walnuts. Stir into the salad very gently. Check and adjust seasoning.

Goat Cheese Drop Biscuits

From Joy The Baker, these are quick and easy biscuits for any meal.

Ingredients

2 c. all-purpose flour
3 tsp. baking powder
1 1/2 tsp. salt
4 tbsp. cold, unsalted butter, cut into cubes
1 tbsp. unsalted butter, for the pan
2 tbsp. unsalted butter, melted to top the biscuits
4 tbsp. goat cheese, crumbled
1 c. buttermilk

Directions

Place a rack in the upper third of the oven and preheat to 425 degrees. Place a 10-inch cast iron skillet in the oven to preheat, as well.

In a medium bowl, whisk together flour, baking powder and salt. With your fingers incorporate the butter and goat cheese until the flour resembles a coarse, pebbly mixture. Make a well in the center of the flour mixture and pour in the buttermilk. With a fork, mix together the buttermilk and flour until all of the dry flour disappears.

Melt 2 tablespoons of butter in a small sauce pan or in the microwave. Set aside. Remove the cast iron from the oven and place one tablespoon of butter in it. Work the pat of butter around, greasing the entire pan, including the sides.

Spoon the batter, by the 1/4-cup into the hot skillet. The biscuits will touch when baked. Brush with melted butter. Bake for 14 to 16 minutes, until slightly golden in color. Remove from the oven. Let rest for 5 minutes. Serve warm.

Applesauce

We have tried a few different combinations of spices in our applesauce, so let yourself live a little! Many recipes call for sugar, but we find the apples offer enough sweetness!

Ingredients
1 peck (13 lbs.) apples, peeled, cored and quartered
3 c. water
4 tbsp. lemon juice
4 tsp. ground spices

Directions
Peel and core the apples. We recommend using one of those gadgets they sell that peels and cores at the same time -- it is a huge time saver. As you peel and core, drop the apples into a bowl of water and lemon juice to help prevent browning. Then quarter the apples and add to a large stainless steel pot, with 3 c. water.

Bring to a boil over medium-high heat. Reduce the heat and boil gently, stirring occasionally, for five to 20 minutes, until apples are tender (the time will depend upon the variety of apple and their maturity). Remove from heat and let cool slightly, about 5 minutes.

(If you want a smoother applesauce, puree at this point.) Add spices and lemon juice. Maintain a gentle boil over low heat as you ladle hot applesauce into jars. Remove any air bubbles with a small rubber spatula and adjust headspace to 1/2 inch. Wipe rim, center lid on jar, and screw band down until resistance is met. Increase resistance to fingertip-tight. Place jars in the canner and process at a rolling boil for 20 minutes. Remove canner lid, wait five minutes then remove jars, cool and store.

Makes about four quart jars.

Mango & Tomato Salad

An adaptation from one of the Moosewood cookbooks, this is a light summer salad, perfect served alongside grilled veggie burgers.

Ingredients
2 c. fresh mango, diced
2 c. tomatoes, chopped
2 tbsp. olive oil
1 tbsp. red wine vinegar
2 tbsp. mint, finely chopped
1/3 c. scallions, finely chopped
1/4 tsp. salt
Freshly ground black pepper, to taste

Directions
Toss together all of the ingredients in a bowl. Set aside for 10 minutes before serving to allow flavors to meld. Serves 4 as a side dish.

NOTE: You can use any fresh fruit, so choose something in season! Also, try substituting Thai basil or cilantro for the mint.

Asian Broccoli Slaw

Easier than my Asian Cabbage Salad, but also very tasty, this slaw is a Kalkman classic. If you're looking for a vegetarian option for the seasoning, try "Better Than Boullion No Chicken Base" as a substitute for the Ramen flavor packets. Use two teaspoons for each packet.

Ingredients
1 pkg. "rainbow" broccoli slaw
A few handfuls of sliced almonds
A few handfuls of sunflower seeds
4-5 scallions, cut with scissors
1 pkg. Ramen
1/3 c. vegetable oil
1/3 c. red wine vinegar
1 tbsp. sugar

Directions
Mix slaw, almonds, sunflower seeds and scallions. Crush Ramen noodles and add, dry. Mix dressing ingredients -- oil, vinegar, sugar, seasoning -- and pour over salad. Prepare a few hours ahead of time for softer noodles.

Serves 4.
