Asian Broccoli Slaw
Ingredients
1 pkg. "rainbow" broccoli slaw
A few handfuls of sliced almonds
A few handfuls of sunflower seeds
4-5 scallions, cut with scissors
1 pkg. Ramen
1/3 c. vegetable oil
1/3 c. red wine vinegar
1 tbsp. sugar
Directions
Mix slaw, almonds, sunflower seeds and scallions. Crush Ramen noodles and add, dry. Mix dressing ingredients -- oil, vinegar, sugar, seasoning -- and pour over salad. Prepare a few hours ahead of time for softer noodles.
Serves 4.
Curried Red Lentil Burgers
Ingredients
1 c. dried red lentils
2 c. water
1/2 tsp. ground tumeric
1 tsp. salt
1-1/2 c. onions, diced
3 garlic cloves, minced
2 tbsp. olive oil
1/2 c. celery, diced
1 c. red bell peppers, diced
1 tbsp. ginger root, peeled and grated
1 tbsp. curry powder
1/2 tsp. ground cinnamon
2 c. cooked brown basmati rice
3/4 c. toasted cashews or peanuts, finely chopped
1 tbsp. lemon juice
1/4 c. fresh cilantro, finely chopped
Directions
Cook brown rice and set aside. Rinse and drain the lentils. Put them in a small saucepan with water and bring to a boil. Add tumeric and 1/2 tsp. of the salt, reduce heat to low, and cover, simmering for about 20 minutes, or until the lentils are very soft and the water has been absorbed. If there is liquid left, drain before adding to burger mixture.
Meanwhile, cook onions and garlic in olive oil until softened. Stir in celery and red pepper, and continue to cook for five to seven minutes. Add ginger, curry powder, cinnamon, remaining salt, and cook for another minute, stirring constantly. Mix with rice and lentils. Add nuts, lemon juice, cilantro and mix well.
When the burger mixture is cool enough to handle, shape into patties using about a 1/2 cup of mixture. Place on a baking sheet and bake in a preheated 400 degree oven for about 25 minutes.
Excellent served with a fruit chutney and Greek yogurt. Makes six patties.

Fried Plantains
Cut the ends off each plantain, score the skin lengthwise and peel off the skin. Cut into one-inch segments. Heat about 1/3-inch of oil to medium-low in a pan (enough to cover the plantains half way when the pan is full.) Fry about 90 seconds on each end -- the entire outside should turn a deep yellow, but not brown -- then remove to paper towel.
Turn oil up to medium-high. With a flat spatula or bottom of solid glass, smoosh each piece into a disc (do this on a cutting board, so that the discs don't pick up pieces of paper towel.) Fry again, flipping half way through, for a total of 2-4 minutes. Should brown a bit and be very crispy on the outside. Remove to paper towel and salt immediately.
Each plantain makes about 8 chips.

Spring Lemon Creme
My take on Ina's Lemon Fusilli with Arugula, this pasta dish is light-tasting, despite the cream. Best with spring's earliest vegetables, like broccoli, asparagus, and greens.
Ingredients
1 lb. pasta
1 tbsp. olive oil
1 tbsp. garlic, minced
1 tbsp. shallots, minced
2 c. heavy cream
3 lemons
A few splashes of dry white wine
2 tsp. kosher salt
1 tsp. black pepper, freshly ground
1 bunch of asparagus
1/2 lb. baby arugula
1/2 c. pecorino romano, freshly grated
1 pint grape tomatoes
Directions
Heat the olive oil in a medium saucepan over medium heat, add the garlic and shallots, and cook for 60 seconds. Add the cream, the zest from two lemons, the juice from two lemons, the white wine, salt and pepper. Bring to a boil, then lower the heat and simmer for 15 to 2o minutes, until it starts to thicken.
Meanwhile, cut the asparagus into 1-inch pieces. Blanch in a pot of boiling water for 2 to 4 minutes, just until tender. Drain and run under cold water to stop the cooking. Set aside.
Cook and drain the pasta. Immediately add the cream mixture and cook over medium-low heat for three minutes, until most of the sauce is absorbed into the pasta. Pour the hot pasta into a bowl, add the arugula, pecorino, tomatoes and broccoli or asparagus. Cut the last lemon in half lengthwise, slice it 1/4-inch thick and add to the pasta. Toss well, season to taste and serve hot.
Serves 4.

Butternut Squash Risotto With Sage
2-3 cloves of garlic, chopped
Salt
1 small winter squash or pumpkin (about 1 lb.)
3-4 c. vegetable stock
4 tbsp. unsalted butter
2 tbsp. extra-virgin olive oil
1 yellow onion, chopped
1-1/2 c. Arborio rice
About 5 fresh sage leaves, finely shredded
1-1/2 c. dry white wine
Pinch of nutmeg, freshly grated
Black pepper, freshly ground
3/4 to 1 c. Parmesan cheese, grated
Directions
In a small bowl, using a fork, crush the garlic with a pinch of salt. Set aside. Halve the squash and scoop out the guts. Peel the halves, then cut one half into 1/2-inch cubes and coarsely shred the remaining half using the large holes of a grater-shredder or food processor.
Pour the stock into a saucepan, bring to a simmer over medium heat, and adjust the heat to maintain a gentle simmer. In another heavy saucepan, melt half the butter with the olive oil over medium heat. Add the diced squash and the onion and saute until softened, about five to seven minutes. Raise the heat to medium-high, add the rice, and cook, stirring, until the kernels are coated with teh butter and oil and are opaque, three to five minutes.
Add the sage and pour in 3/4 cup of the wine. Cook, stirring, until the wine is absorbed. Stir in the remaining wine and again, cook and stir, until absorbed. Now, begin adding the hot stock about a 1/2 cup at a time, stirring until almost all of the stock is absorbed before adding more. When the rice is almost tender, after about 15 minutes, stir in the reserved shredded squash. Continue to cook, adding more stock and stirring constantly, until the rice is firm but tender and the center of each kernel is no longer chalk-white, 20 to 25 minutes total. Stir in the crushed garlic, the nutmeg, and salt and pepper to taste. Add additional hot stock if necessary.
Stir in Parmesan cheese to taste, then spoon the risotto into warmed soup plates. Serve at once. Serves 4.
Spaghetti Squash Primavera
Ingredients
1 medium spaghetti squash (about 3 lbs.)
2 c. heavy cream
1/2 c. vegetable stock
2 cloves garlic, crushed
1/4 tsp. crushed red pepper flakes
1-1/2 c. small broccoli florets
1 small golden zucchini, cut into 1/4-inch matchsticks
1 small green zucchini, cut into 1/4-inch matchsticks
1-1/2 c. fresh or frozen peas, thawed
2 tbsp. unsalted butter
1 medium red bell pepper, julienned
1/2 lb. shiitake mushrooms, stemmed and sliced 1/4-inch thick
1 tbsp. Creole (coarse-grain) mustard
1 c. grated Parmesan cheese (plus more for garnish)
Salt and pepper, freshly ground
Directions
Preheat the oven to 350 degrees. Leaving the spaghetti squash whole, prick the skin all over with a knife. Place on an ungreased baking sheet without any water and bake in the oven for an hour.
NOTE: You can also use a microwave here. Pierce the spaghetti squash with a fork and microwave whole for a few minutes, softening only slightly for cutting purposes. Cut lengthwise with a knife, scoop out squash guts. Place the spaghetti squash flesh-side down in a microwave safe baking dish, in about an inch of water. Cover with a lid or plastic wrap and nuke for six to 10 minutes, depending on the size of the spaghetti squash.
While the spaghetti squash is cooking, in a heavy saucepan over medium heat, combine the cream, stock, garlic and pepper flakes. Bring to a boil, then reduce the heat to low and simmer, stirring occasionally, approximately 20 minutes, until thickened. Remove and discard the garlic. Remove the sauce from the heat and cover to keep warm.
While the sauce is thickening, fill a saucepan with water and bring to a boil. Drop the broccoli into the water and boil for one to two minutes. Using a slotted spoon, remove the broccoli, drain well, and add to the sauce. Add the zucchini strips to the same water and boil for 30 seconds. Drain and add to sauce. Add the peas for two to three minutes, drain and add to sauce.
In a skillet over medium-high heat, melt one tablespoon of the butter. Add the bell pepper, and saute for about five minutes, or until tender. Transfer to the sauce. Add the remaining butter to the same pan over medium-high heat. Add the mushrooms and saute approximately 10 minutes, or until browned and tender. Transfer to the sauce.
When the spaghetti sauce is done, let cool slightly and slice in half lengthwise. Scoop out the seeds. USe a fork to scrape the strands into a large, warmed pasta bowl. Separate the strands with the fork. Whisk the mustard and Parmesan into the sauce and reheat gently. Pour the sauce over the spaghetti squash and toss until strands are evenly coated. Season with salt and pepper to taste. Garnish with Parmesan and serve immediately. Serves 4.
